Goldband Snapper has a delicate mild-moderate flavour, sweet sea taste with low oiliness. Pinkish flesh when raw. White, moist, firm flesh with large flakes when cooked and edible skin. Holds together well during cooking and highly versatile. A popular choice for sashimi and works well in mousseline and fish cakes.
Fillet will be supplied skin-on unless otherwise requested.
